
We never let ripe bananas go to waste in our house! We made these banana oat muffins as an afternoon treat, and my kids loved them! We highly recommend giving them a try! Healthy (or healthy-ish) muffins are great for breakfast along side high protein foods like greek yogurt or cottage cheese. Here’s how we made these delightful muffins!
Ingredients:
3 ripe bananas
1 egg
1/2 cup brown sugar
3/4 cup milk
1/3 cup oil
1 cup rolled oats
1 1/2 cups flour
1 tsp vanilla
1/2 tsp cinnamon
1 tsp baking soda
2 tsp baking powder
Directions:
1. Preheat oven to 400°. Mash bananas in a bowl. Add egg, brown sugar, oil and milk. Stir to combine.
2. Add in rolled oats and cinnamon.
3. Separately, mix together flour, baking soda and baking powder.
4. Combine wet and dry ingredients and stir well.
5. Place mixture in greased muffin tins. Add a few rolled oats on top.
6. Bake for 17-18 minutes.
7. Enjoy!
